Strawberries & Cream Bread

The WalMart here in town had a 2 pound container of fresh strawberries for $1 and I couldn't pass up a great deal.  So, I bought two containers, got home and didn't know what I was going to do with 4 pounds of strawberries. 

I searched the internet for recipes and found this one for bread and it turned out really good!!!  Hope you enjoy it as well.



Strawberries & Cream Bread

1 3/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup butter, softened
3/4 cup sugar
1/4 cup light brown sugar            
2 eggs, room temperature
1/2 cup sour cream, room temperature
1 teaspoon vanilla
1 1/4 cups strawberries, fresh & coarsely chopped (do not use frozen)
3/4 cup walnuts (optional)             
 
Combine flour, baking powder, baking soda, salt and cinnamon; set aside.  In small bowl, beat butter until creamy. Gradually add sugar, beat 1 minute or until light and airy. Add brown sugar. Beat in eggs, one at a time. Beat in sour cream and vanilla.  Stir into flour mixture only until dry ingredients are moistened.  Fold in strawberries and nuts.  Pour into a greased 8 x 4 inch loaf pan.  Bake at 350°F for 60 to 65 minutes or until toothpick comes out clean.  Let stand 10 minutes in pan.  Turn out on rack to cool.

Birthday Buddies layout

With this layout, I completed two challenges. First challenge was to use a sketch from Creative Scrappers (http://creativescrappers.blogspot.com/) and the second challenge was to use 5 patterned papers on the same layout from Boys Rule (http://boysrulescrapbookkits.blogspot.com/).

Cake Mix Cookie Bars

I made these bars for our Pinewood Derby concessions and they were a big hit.  Such a big hit that I didn't even get a peice to try.  So, I had to make them again.  Such a simple recipe with amazing results!!!  You will love them.
I found the recipe on pinterest.
 
 
 

1 box yellow cake mix
1 small box instant vanilla pudding
1/4 cup water
3/4 cup vegetable oil
2 eggs
1 cup chocolate chips (you could use M&Ms too)

Preheat oven to 350 degrees.

Combine all ingredients in large bowl.  It will be thick!  Pour batter into a greased 9x13 baking dish.  Bake for 25-30 minutes or until edges are golden brown.
